Basic Italian food, a recipe for a nice & tasteful Tortelloni pasta dish which can be served within 10 minutes!
Make sure you do have the following ingredients available (recipe for 2 persons):
– 250 gram tortelloni with cheese & walnuts (filling), supermarket, fresh not dried
– 400-600 gram fresh spinach (it looks huge… I know)
– 2-3 cloves of garlic (less if you want)
– Parmesan Cheese (Pamigiano Reggiano D.O.P.) shredded
– olive oil for cooking
– olive oil Extra Vergine
Pre heat two plates in your oven before you start with the food preparation, as it will only take 10 minutes to create this dish.. so pre heating of the plates should be started at the beginning.
Next step start with pre heating the wok (ad some cooking oil), boil water in a separate pan, as soon as the water is boiling add the tortelloni pasta and cook for 4 minutes. In the mean time you will start stir frying the spinach in the wok, raw spinach (600 gram is a huge bag, but don’t worry it will shrink..) will take up the whole volume and after about 3-4 minutes not much will be left. (see pictures) While stir frying ad the crushed garlic.
Most important part of the whole preparation is the stir frying of the spinach leaves. Use a wok (preferable) to stir fry the spinach @moderate heat and do not burn the garlic or spinach. To much heat and burning of the ingredients will destroy the taste completely.
If you are quick you can shred some parmesan in between the stir frying, if not shred the cheese before the water starts boiling.
After 4 minutes drain the water from the tortell0ni, take the two pre heated plates out of the oven, start plating by putting the tortelloni onto the plates. Sprinkle some Extra Vergine olive oil on top of the tortell0ni. Next step take a large spoon preferable one which can drain any water released during stir frying the spinach. Dish up the spinach on top of the tortelloni. To finish ad shredded Parmigiano Reggiano cheese.
Some black pepper and shredded sea salt can be added if you like.
